Best breakfast - Overnight Oats

    Ingredients:

    1/4 cup of rolled oats (I buy mine in bulk at the health food store)

    1 cup of almond milk (You can use dairy too)

    1 tsp pumpkin butter (I use the Trader Joe's brand. You can make your own; it's easy and quick). You can add a spoon of honey if you prefer.

    Fresh or frozen fruit (I use frozen peaches, strawberries, blueberries)

    A dash of cinnamon or allspice

    Half an ounce of any type of nut (I use walnuts)

    Put it all (except for the nuts) in a small glass jar or container of your choice. Shake it well. Keep overnight in refrigerator. The next morning, take out the container and let it sit for about 20 minutes so it takes the chill away. Add nuts or seeds or whatever healthy topping you like and enjoy!

    It's delicious!

    I'm into fruit lately for breakfast. Of course I do enjoy a cholesterol fest occasionally. Eggs, sausage, bacon, hash browns, etc. Lately though it's fruit and a slice of toast, maybe a boiled egg too. Usually have cantaloupe, pineapple, and grapes these days.
