    Probably baked chicken, sauteed spinach, some brown rice and Bartlett pears (love 'em!).

    Grilled salmon, mixed salad with arugula and baby kale, grilled zucchini and sweet onions and Bartlett pears.

    Chicken breast baked in portobello mushroom and garlic sauce. Medley of roasted vegetables with basil - yellow squash, green zucchini, sweet onions and tomatoes. Bartlett pears and Gala apples.

    Served my inlaws roasted pork tenderloin (pan seared/dry spice rub)w/Dijon mustard sauce, fresh corn, salad, stuffing, garlic bread, iced tea and lemon cake and coffee.

    I had a huge bowl of green leaf lettuce, baby spinach and arugula with half a cup of chopped cashews, vine ripe tomato, corn kernels, black beans, chopped oven roasted chicken breast and olive oil/balsamic vinegar dressing. Loved it.

    Salmon filets with orzo and spinach.

    Southwest Chicken Soup and cornbread.

    Made some chicken stock the day before yesterday. Baked an acorn squash, and emptied a can of pumpkin filling. Put it all together with some spices, a dash of almond milk, bit of sauteed onions and voila'...we're having a homemade version of cream of squash soup with roast chicken.
