    Since there are several people here with food sensitivities I have compiled a list which may be beneficial to those of you with wheat or gluten intolerances.

    Gluten and Wheat Free Food Resources
    What works for me may not work for you. Always check labels and ask manufacturers/grocers/food prep workers as many questions as you need to in order to determine if what you want to eat is safe for you.

    Something Good - www.somethinggood.us . Australian company that makes Gluten, Dairy and Nut Free boxed baking bread and cake mixes. The Chocolate Mud Cake is the absolute best I've found.     If your allergy is to wheat, not gluten , Spelt may be a flour and bread option for you to try. Vita-Spelt has a great white Spelt flour that looks just like wheat. Add one teaspoon of Guar Gum (a binding agent that is added in place of gluten which is mostly absent from Spelt) for every cup of Spelt flour and bake your recipes as directed.

    Indian food:
    Most Indian food is fine for people on a G/F or W/F diet. Stay away from fried items like Samosas as well as Naan.

    As for me, corn is not a problem so I eat a lot of cornbread and corn tortillas.

    Packaged food items are the most challenging because of the amount of ways wheat can be hidden in a product. www.celiac.com is a great resource for lists of food items which are safe and which can cause challenges to wheat and gluten intolerant people. As in all cases read the labels and determine which product is safe for you to eat.

    My personal list of prepackaged "safe" foods from regular grocery stores includes Frito's brand corn chips, Mission tortilla chips, LARA bars, along with some potato chips, rice cakes, dried fruits, nuts and not much else.

    Alternate Flours for Baking:
    I found Spelt flour works the best for me and is the most wheat-like of the bunch. If you cannot eat spelt Arrowhead Mills http://www.arrowheadmills.com/health/gluten-free.php makes many different flours. They have an all-purpose baking mix with a combination of flours that is quite good. You can substitute it cup for cup in most recipes without having to add Guar Gum or Xanthan Gum (binding agents substituting for gluten) since it is already in the mix. Because of the density of the grains it can take longer to cook items. The G/F recipes I have found generally have a longer cooking time at a higher temperature than is usually found with wheat based recipes.

    A few weeks ago I discovered corn pasta as a substitute for rice and wheat pasta. Cooking and eating rice pasta was ok for the day I made it but by the following day the rice pasta broke down and no longer tasted good. Enter corn pasta. I was able to make a cream cheese kugel and other pasta dishes and the pasta held up beautifully the following day and for at least the next three days. The corn pasta I used is Sam Mills Pasta de Oro. You can buy their items on-line at Amazon, Celiac.com and other gluten free sites. Other companies offer corn pasta. Google it.

    Just back from Brazil, I LOVED eating all the things made from manioc/tapioca. I brought some flour back with me. Gluten free, baby, and delicious!

    Here is one thing I ate that I just loved...

    It's a chewy, yummy crepe-like thing made in a skillet/frying pan. They often cooked it with a white cheese melted inside, like a little turnover.


    and there was also a yummy tapioca cake made in a ring mold and covered with grated coconut. oh, my. chewy and yummy. it was a breakfast thing. When I find the recipe, I will post that, too.
