Limehouse Chicken

    I made this for dinner last night. It's one of my favorite recipes, and very simple.

    3 or 4 deboned skinless chicken thighs
    1/3 c. flour
    1 lime, juice and zest
    3 tsp paprika
    1 tsp salt (this can be left out, no problem)
    1/2 c. chicken broth
    1/2 c. white wine
    1 T brown sugar
    several sprigs of mint leaves or use dried mint
    canola or olive oil for frying

    Mix the flour, paprika, and salt, if using. This will be used to coat the chicken pieces. Dip each chicken piece in lime juice, then coat with the flour mixture. Fry in the oil until browned. Place pieces in a shallow baking dish--I find that a glass pie dish works well. Mix the lime zest with the brown sugar and put a little bit on each chicken piece.
    Mix the chicken broth and white wine. You can add a T of the lime juice and 1 tsp of the flour mixture to this if you wish. Pour into the baking dish with the chicken pieces.
    Sprinkle chopped up fresh mint or crumble the dried mint over the whole thing. Bake in the oven at 375 F for 45 minutes. Good served with brown rice.
