Carrots

    Carrots are slightly high on the arginine so I try not to eat a ton of them. But I do make a sweet carrot side dish sometimes. Peel and slice into coins several carrots. Heat a cast iron skillet over medium heat and add a couple tablespoons butter. Add the carrots and sauté until they get a bit of caramelization. Then pour a couple tablespoons of maple syrup on, reduce heat and coat them quickly. You can add a little salt and pepper if you like.

    Hey, you may want to not peel the carrots. Like most fruits and vegetables, the nutrients are in and near the skin. The smaller they are there’s more nutrition, as well. :)
