So it seems fatigue is a common symptom of vestibular conditions

As I was trying to workout since my latest attack, I found I would be too fatigued the next day to function well

I used to work out pretty hard, either biking or weightlifting

is there any chance of ever getting back into working out the same way? Maybe if I get serc and it works for me and helps my vestibular system?

One of the most important things is that you learn listening to your body.
Our bodies are under enormous physical stress with a vestibular system out of order.
My doctors told me - rest for 24 hours (at least) after an attack. Just move eyes , and then your head, then try to walk straightforward. That might be hard enough.
Try to find a physiotherapist specialised on vertigo. Mine began with me like after a stroke and that was perfect. E.g. climbing on a balance board was too much in the beginning and really contraproductive.
After four years I could do a normal program of strenghtening in a studio. But I am over 60...not the same with you.
And please check if you need less stress (and not more workout).
    Be kind to your body.
