Lemon Meringue Chesecake

    Did you make it yet, Cheryl?

    If so was it a hit?

    I might make it for Thanksgiving as I have some who don't care for pumpkin pie.

    I did! Very yummy. I really like lemon, so I used all the zest from two large lemons. The recipe called for two tablespoons of zest, but I ended up with at least three tablespoons. I heated the egg whites just like the recipe said to do and with a cup and a half of sugar, the meringue turned out to be like marshmallow cream. My cheesecake looked just like the picture.

    If you try it I don't think you'll be sorry. Next, I'm going to try the recipe for the S'mores cheesecake.

    I need to get a lemon zester. My DIL loves lemon meringue pie, but doesn't like cheesecake so I have a challenge.

    I have never made meringue like that either , sounds like it turned out well.

    Let me know when you try the s'more one. I love s'mores.
