Roasted Chickpeas

    I keep my sodium way down so I soaked and boiled a pound (not canned) for a different recipe and had some left over. I threw them in the oven with olive oil (400F for 30-40 mins) and then put lemon pepper on them (Mrs. Dash's but any low sodium lemon pepper works).

    They are SO GOOD. I was caught off guard. It's like corn nuts but without the sodium, with a lot more protein, and without supporting the corn corporation (in the US)! Of course you can put any seasoning on them you want. Here's a recipe
